2012 WFFC Chicago 50 Shades of Flavor - Bringing Passion to Food!
The WFFC Chicago chapter held its 4th quarter event on November 7th, at FONA International with an amazing turnout of over 110 attendees. The evening began with a networking session, which included tasty appetizers and champagne and was followed by a three course dinner prepared by The Moveable Feast. After dinner, Marie Wright, Chief Global Flavorist at Wild Flavors, presented “50 shades of Flavor…Bringing Passion to Food!” Wright discussed how flavors and aromas invoke our senses and affect our minds. The audience was engaged as they tasted and smelled interesting samples. For example, Wright described the sulfide in truffles as sexy and the indole in Neroli and stinky cheese as flirty. She also mentioned the emergence of Peruvian cuisine and referenced Huacatay in a black mint paste. Wright concluded with “creating flavors gives the power to create an unforgettable taste. There is more to life than Vanilla!”
